QUALIDADE NUTRICIONAL DE DIETAS VEGETARIANAS

Atualmente o consumo da linhaça (Linum usitatissimum) tem aumentado muito devido ao crescente conhecimento de suas propriedades benéficas. Considerado um alimento funcional, ela se destaca por apresentar, além de suas funções nutricionais básicas, efeitos metabólicos e fisiológicos positivos à saúde. É uma oleaginosa rica em proteína, gordura e fibras dietéticas, possuindo, a cada 100 gramas, cerca de 396 Kcal, sendo 109 Kcal provenientes de proteínas e 287 Kcal provenientes de lipídios. Sua composição consiste em 41% de lipídeos, 21% de proteínas, 28% de fibras dietéticas, 4% de resíduo mineral e 6% de outros carboidratos (açúcares, ácidos fenólicos, lignano e hemicelulose). Diante disto, este trabalho tem por objetivo, através de uma revisão bibliográfica sobre o assunto, avaliar os efeitos da semente de linhaça (in natura, óleo ou farinha) e seus potenciais efeitos benéficos à saúde. Foi realizada pesquisa bibliográfica nas bases eletrônicas Scielo, Medline, LilacseBireme. Os artigos foram analisados conforme critérios de qualidade pré-estabelecidos.
