Unconventional food plants in Brazil: what does Nutrition know about this topic?

Abstract

Unconventional food plants, known by the acronym UFP (PANC, in Portuguese), are vegetables, fruits, flowers or herbs that grow spontaneously in nature, but because they are unknown to most people, they end up being confused with weeds. This study aimed to carry out a survey of the research on non-conventional food plants in the records of the last six editions of the Brazilian Congress of Nutrition (CONBRAN) and of the last seven editions of the Congress of the Brazilian Society of Nutrition (SBAN), indicating the profile of these studies in Brazil in the field of Nutrition. It is a qualitative, descriptive and exploratory research. Twenty-five studies on the subject at the CONBRAN Congress and ten at the SBAN Congress were identified, indicating that UFP still are little explored subject and rarely addressed in Nutrition research in Brazil. We highlight the emerging research potential that UFP can represent in the field of Food in its most diverse aspects: cooking, gastronomy, food safety, food science, among others. This research contributes to the expansion of knowledge and direction of studies in this area and it may also signal an agenda for future studies.

Ítalo de Paula Casemiro, Universidade Federal do Rio de Janeiro

Acreano, natural de Rio Branco. Mestre em Administração pelo Programa de Pós-Graduação Mestrado em Administração da Universidade Federal de Rondônia - UNIR (2014), onde analisou a presença de conteúdos sobre gestão da diversidade nos currículos dos cursos de bacharelado em Administração de Universidades Federais do Brasil, tendo cursado esta pós-graduação como bolsista da Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES. Bacharel em Administração de Empresas com Ênfase em Análise de Sistemas pelo Instituto de Ensino Superior do Acre - IESACRE (2011), tendo cursado o referido curso como beneficiário de bolsa integral através do Programa Universidade Para Todos - PROUNI. Graduando em Gastronomia pela Universidade Federal do Rio de Janeiro - UFRJ, onde desenvolveu como trabalho de conclusão de curso o estudo sobre o perfil da produção científica sobre gastronomia em periódicos brasileiros de turismo. Pós-graduando em Gestão Urbana e Saúde pela Escola Nacional de Saúde Pública Sérgio Arouca - ENSP-FIOCRUZ, onde desenvolve a proposta de intervenção intitulada "Gestão Urbana e Big Data: modificando a atuação na gestão, a partir da análise de grandes dados". Pós-graduando em Gestão Ambiental, onde desenvolve a pesquisa intitulada "Entre o Artesanal e o Convencional: Avaliação do Ciclo de Vida em Cervejarias Artesanais. Pesquisador do Grupo de Pesquisa em Gestão da Inovação e Tecnologia (GEITEC) e do Grupo de Estudos de Recepção Audiovisual na Educação em Ciências e Saúde (GERAES). Possui experiência na área de Administração, Alimentos e Educação, atuando principalmente nos seguintes temas: educação a distância, gastronomia contemporânea, segurança alimentar, comportamento organizacional, diversidade nas organizações, gestão ambiental, gestão urbana, sociologia urbana, tecnologias sociais, negócios sociais e divulgação científica. e. Áreas de interesse: gestão da diversidade, estudos sobre competências comportamentais em administração e ensino em administração.
