The article aims to present the main geo-economic transformations in the productive structure of China's agriculture, demonstrating its impact on the development of productive forces and production relations, as well as changes in the country's food. The methodology is exploratory, based on a bibliographic and statistical survey, aiming to assemble an overview of the historical process of transformation of the theme. Changes in Chinese agriculture developed at the same rapid pace of urbanization and industrialization that the country was going through, aiming to modernize and expand food production. Institutional innovations occurred that reorganized production structures, transforming China into the largest agri-food power in the world. The challenges were to ensure food for the rapidly growing urban population and to control the rural exodus. New challenges include obtaining agricultural raw materials in a crowded world market, depleting arable land and water pollution
