DEMETRA: Food, Nutrition & Health, ISSN 2238-913X, is a scientific journal edited by the Institute of Nutrition of Rio de Janeiro State University. Its mission is the publication of debates, reviews and research findings relevant to the field of Food, Nutrition and Health.

We receive originals from both the Biomedical field and from the Social and Human Sciences or from the Agricultural Sciences or Engineering and others that deal with food or nutrient issues.

It is an open and free electronic journal that receives manuscripts in Portuguese, Spanish or English. After the peer review process, the journal divulges, at no cost to the authors or readers, complete original manuscripts in two versions: Portuguese and English or Spanish and English.

The abbreviated title of the journal is Demetra, which should be used in bibliographies, footnotes, references and bibliographic legends.

The journal has the policy of not accepting any kind of support from or associated with initiatives that are adverse or harmful to the human health. This posture is possible only because of the important financial support granted by the funding bodies that sponsor our work: Rio de Janeiro University, the Nutrition Institute, and the Graduate Program for Food, Nutrition and Health.

These are the journal’s commitments:

-proceed with maximum agility the evaluation of the originals;

- publish the accepted articles as quickly as possible:

-invest in the magazine indexing in national and international bases;

-keep free access to complete manuscripts in English (always) and also Portuguese or Spanish;

- keep the process of submitting the manuscripts, their evaluation and publication free of charge;

- constantly ensure ethical procedures in science;

- keep open channels of communication with social actors working in the field of Food and Nutrition and science as a whole.

DEMETRA: Food, Nutrition & Health is a continuation of CERES: Nutrition & Health, ISSN 1981-0881, published from 2006 to 2011.

Peer Review Process

Manuscripts meeting standardization under the "Guidelines for Authors" are forwarded for prior evaluation and, if approved, sent to ad hoc evaluators selected by the editors.

Each manuscript is sent to two ad hoc evaluators of recognized competence in the subject matter. If there is disagreement, a third opinion is requested.

The peer review procedure is confidential regarding the identity of the authors and evaluators (double blind). The original text should not include any information that allows authorship identification; authors' data should be reported on the title page.

The review states:

[a] recommended article for publication without revision;

[b] recommended article for publication with request for reformulations;

[c] article not recommended for publication.

The final decision on the publication or not of the manuscript is always issued by the editors. In any of these cases, the author will be notified.

Conflict of interests

When the manuscript is based on a thesis or dissertation, its necessary indicate the author's name, title, year, name of the graduate program and the institution where it was presented.

The public confidence in the peer review process and the credibility of published articles depend, in part, on how conflicts of interest are managed during the writing, peer review and decision-making by the editors.

Conflicts of interest may arise when authors, reviewers and editors have interests that, clear or not, may influence the development or the evaluation of the manuscripts. Conflict of interest can be personal, commercial, political, academic or financial in nature.

When authors submit a manuscript, they are responsible for recognizing and disclosing financial conflicts or others, which may have influenced their work. Authors must acknowledge all financial support for the work and other financial or personal connections linked to the research. The reporter should disclose to the editors any conflicts of interest that could bias their opinions of the manuscript, and, when appropriate, should declare himself/herself unqualified to review it.

If the authors are not certain what may constitute a potential conflict of interest, they should contact the editorial office.
